Sesame Tuna and Soba Noodle Salad

How often do you have a tuna salad? This Sesame Tuna and Soba Noodle Salad with crispy fresh vegetables may become your favourite. This simple salad takes advantage of the flavours of soba noodles and tuna. The hero of the dressing is tahini which gives this salad a creamy finish as well as a delicious sesame flavour.

Tip: When using nori sheets as Justine does in this recipe, use kitchen scissors instead of a knife to cut the nori into thin strips.

Did you know:  Originally, the term nori was generic and referred to seaweeds, including hijiki. One of the oldest descriptions of nori dates back to around the 8th century.

Soba noodles have a nutty and earthy flavour. They’re made of buckwheat and may be one of the healthiest noodles to eat. Soba noodles are similar to spaghetti noodles in size, a bit more tender, and much more nutritious. The Japanese word for buckwheat is soba. Buckwheat flour is incredibly nutritious, containing fibre, vitamins, minerals, antioxidants and protein, as well as a great prebiotic, feeding all the good gut bacteria. They also have a low glycemic index helping maintain healthy blood sugar levels, Finally, authentic soba noodles are gluten-free.
